Kefir – Healing Mushroom in The Caucasus – Healthy Positive Mind –
Kefir is a delicious and nutritious dairy drink originating in the Caucasus. According to legend, the granules and instructions for its preparation were given to the natives directly from the Prophet Muhammad, together with the commandment about keeping it secret.
The inhabitants of the Caucasus, for which is believed that they owe their vitality and longevity to everyday enjoyment of this healing potion, have indeed for centuries jealously guarded the secret of kefir preparation. In fact, up until the moment when love became involved in its story. Unfortunately, unhappy love – at least according to the statement of one witness, Prince Bek-MirzaBarchorov.
At the beginning of the 20th century, beautiful Russian woman Irina Sakharova decided to visit Prince in Kislovodsk, a city in the North Caucasus, in an attempt to deceive the Prince and coax from him a few precious grains for preparing kefir.
The first part of the plan was entirely successful, but not the second, because the prince refused to grant the wish of Irina, in fear of punishment for violation of religious law, after which disappointed beauty went back home with her plan unfulfilled. But the prince had no intention of letting her get away, and in accordance with local custom, he ordered the kidnapping of the bride. However, the wedding was ruined after Irina entourage reported prince’s scandalous plan to the emperor. Angered by prince’s plan, the emperor ordered the prince to give Irina a few grains for preparing kefir, as a punishment for his behavior.
And so it began. From then onwards, kefir has gradually spread throughout the world, and many discovered its medicinal properties.

It is important to note that industrially manufactured kefir is not made of ‘kefir fungi,’ but hops and bacteria cultures that give the same flavor, but not the quality, to the beverage.
For this reason, it is best to prepare kefir at home. Method of kefir preparation is really simple. You only need milk and mushrooms, or kefir grains.
Traditionally, you cannot use metal spoons for the preparation of kefir, since they can undo the beneficial effects of the beverage. For half a liter of kefir, you need two tablespoons of grains and milk of any kind (cow, sheep, and goat).
Milk can be cooked or uncooked, but it should not be hot.
It is recommended that milk should not contain less than 2.8% fat – the higher the fat content in milk, the better the kefir.
Pour milk into a glass or plastic bowl. Put grains in it. Cover the mixture or example, with a plate), and leave the mixture at room temperature for 24 hours. The room temperature should not be higher than 30 degrees. Within 24 hours the liquid will thicken. You can stir it occasionally to check consistency. After that, filter the mixture (recommended to use a plastic strainer), pour it into a bottle and keep it in refrigerator.
Kefir mushroom should be washed with cold or lukewarm water and left in the refrigerator, in cold water or milk for a day or two (until the next use). Kefir grains will quickly multiply, which will allow you to make large quantities of this beverage. The quantity of milk for the preparation of kefir increases proportionally to the amount of grains. Drink kefir everyday in order to protect your health and vitality. It is recommended to start with 1 dl and gradually increase the quantity. Drink 1 liter of kefir beverage daily for therapeutic purposes.
Where to get kefir
Unfortunately, you can not purchase kefir mushroom in stores. You can take it from someone who already has it. Kefir fungus reproduces rapidly, so it is not a problem to give it to someone.
